Granola

I love this homemade granola for those mornings after the gym, or when I need something a little quicker than eggs.

Makes 10 portions

Dairy Free/Gluten Free

Ingredients:
120g porridge oats - use gluten free if needed
120g almonds
120g cashews
50g pumpkin seeds
50g sunflower seeds
50g unsweetened coconut flakes or desiccated coconut
40g coconut oil
40g maple syrup
1 tsp vanilla extract

Method:
1.Preheat your oven to 140°C.
2. Add the oats, almonds, cashews, seeds and coconut to a large ovenproof dish.
3. Gently melt the coconut oil, then stir in the maple syrup and vanilla extract.
4. Pour this over the dry ingredients and mix well, making sure everything is coated.
5. Bake for 20–25 minutes, until golden brown.
6. Allow it to cool completely before storing it in an airtight container.

I like to serve mine with yoghurt and berries or stewed apple. If I’m having it after the gym, I’ll make sure I choose a protein-rich yoghurt too.
